We made cakepops instead of cupcakes or a big cake for the twins 3rd birthday party. If you haven't tried one yet the only way to describe them is a little bit of cake and frosting goodness on a stick. Delicious! I had so many people asking for the recipe so here it is. It is an easy process, it just takes a long time...but the result is well worth it.
First step is to bake your cake...any cake mix from the box works great. Let it cool and then crumble it in a big bowl. It should look like this:
Now add your frosting. Start with about 3 big spoonfuls and mix with your hands. Your cake
should form a large ball. During my first attempt I put way too much frosting and it was
difficult to roll into a ball. Your bowl will look like this when you are done. This is a good time to lick your fingers because it tastes so good.
The next step is to roll the cake into balls. I used a melon baller to make pretty even sized pops. Place them on a wax paper lined sheet pan. One box can made me about 50 pops. I made strawberry cake with strawberry frosting and chocolate fudge cake with chocolate frosting. You can eat them like this, very tasty...but keep going, they get even better.
Chill the cake balls for about 30 minutes and then you will add your sticks. I used both short
sticks and long sticks. Melt Wilton candy melts and dip the stick into the melt. Stick into the
cake ball and then chill again in the freezer until set.
Now it is time to decorate! If your google cake pops you will find tons of ideas. We kept it
simple. Some we dipped in candy melts and sprinkles, others we dipped in candy melts and drizzled a different color on top. Go basic or go creative. It helps to add a bit of shortening to your candy melts to thin it out and make it easier to spread. Candy melts come in tons of colors.
I really wanted to get a picture of people eating the cakepops but they went so fast and I was too busy eating to grab my camera. They were a hit and very easy for kids to eat and not a single pop was wasted. To display them, I covered styrofoam with leftover table covering and poked the pops in. Here are pictures of Abby's princess display and Luke's pirate display. I did end up making them each a small cake...they needed something to put their candles on.
